Выбор ингредиентов
Для приготовления рыбы с овощами на сковороде вам понадобится свежая рыба (можно использовать филе любого сорта), овощи (лучше всего подойдут цукини, баклажаны, сладкий перец, помидоры), лук, чеснок, зелень (петрушка, укроп), специи (соль, перец, тимьян, паприка), оливковое масло.

Нагрейте сковороду с оливковым маслом на среднем огне. Обжарьте лук и чеснок до мягкости, затем добавьте цукини и баклажаны, обжаривайте до готовности. Посолите, поперчите и добавьте специи по вкусу. Переложите овощи на тарелку.
В той же сковороде обжарьте рыбу с обеих сторон до золотистой корочки. Посолите и поперчите. Верните овощи в сковороду, добавьте помидоры и зелень. Тушите все вместе под крышкой еще несколько минут до готовности рыбы.
Подача и подача
Готовое блюдо рыбы с овощами на сковороде подавайте горячим, посыпав свежей зеленью. Подойдет как гарнир отварной рис или картофель. Приятного аппетита!
